Crispy Okra

 

Crispy Okra

serves 4 as an appetizer 

INGREDIENTS

1 pound okra 

2 cups preferred high heat frying oil (vegetable or avocado work great)

2 teaspoons salt 

In a medium pot, heat your oil over medium/high heat. While your oil heats, slice all your okra in half longways (stem to tip). Find a hot oil safe, slotted spatula or spoon and line a plate with towels.

When the oil is about 375 (you can use a thermometer or throw in a test okra) fry up the veggies for 7-10 minutes till golden brown and crispy.

Work in a couple batches so you do not overcrowd the pot to insure nice, crispy okra. When both sides are golden, remove to the towels to dry. Sprinkle with salt and serve with your favorite dipping sauce. 

Basil & Garlic Ponzu Dipping Sauce 

1/4 cup ponzu 

2 minced garlic cloves

1 teaspoons olive oil

1 teaspoon finely chopped fresh basil 

1 teaspoon fresh lemon juice

Combine all your ingredients in a small bowl and stir well to combine. Use as a dipping sauce or marinade for meat or veggies. 


Passion Fruit Aioli 

1/4 cup mayonnaise 

2 tablespoons passion fruit 

1 minced garlic clove

1 teaspoons lemon juice 

Combine all your ingredients in a small bowl and stir well to combine. Use as a dipping sauce, spread, or add more oil and vinegar to transform it to a vinaigrette.
